Mannitol, or E421 - food stabilizer and sweetener, organic six-hydric alcohol. Produced from brown seaweed by extraction. It is a white powder (gray with a cream tint is allowed), it has no smell. Mass fraction of moisture is not more than 3.0%. The mass fraction of the residue after calcination in the form of sulfates is not more than 0.5%. Melting point 166-168°C.
Due to its chemical properties and high purity (content of pure substance not less than 99.0%), mannitol is not hygroscopic. The intensity of the sweet taste of mannitol compared to sucrose is 0.4. When ingested, it causes a feeling of coolness associated with a slight absorption of heat when it is dissolved in water.

In the food industry, mannitol is used as a sugar substitute, it regulates the caking of products, preserves the texture and prevents the formation of lumps. Mannitol is widely used for the manufacture of low-calorie foods, including for diabetic patients. Used in the manufacture of chewing gum. Used to sweeten drinks. Gives tablets and dragees a sweet taste.
